Tomato soup with sausages - hearty, thick, delicious vegetable soup with vegetables and meat broth. Such a soup is good to cook on a cold autumn day, from vegetables ripened in the beds under the sun, it will turn out to be very aromatic, with a rich taste.
Of course, soup can be served to the table without additives, but there are sausages in it so that it is not necessary to cook a second course for dinner.
In childhood, when my mother had no time to mess with meat or chicken, she added a doctor sausage cut into small cubes in my baby soup. Perhaps at an early age everything seems to be tasty, but this recipe, originally from childhood, fell in love with my family, and now, when time is running out, I cook it for my daughter.

Ingredients for Tomato Soup with Sausages
- 1.5 l of meat broth;
- 300 g of doctor's sausages;
- 500 g of red tomatoes;
- 150 onions;
- 300 g squash;
- 300 g of potatoes;
- 100 g sweet bell pepper;
- salt, sugar, vegetable oil, ground sweet paprika, basil.
The method of preparation of tomato soup with sausages
A delicious homemade soup can only be prepared with homemade meat broth. Of course, if there is absolutely no time, and the bouillon cube will come down. However, it is better to keep the finished broth in the refrigerator or freeze - it helps out in case of emergency.
So, remove the frozen fat from the broth. Throw it away is not necessary, it is useful for frying or sautéing vegetables.
In a soup pan, heat 2-3 tablespoons of odorless vegetable oil, throw finely chopped onions, add a little broth.
Strain the onions until transparent.
If you just fry the onion in oil, it can be overcooked and turn into chips, and for the soup you need a caramelized onion - soft, delicate, transparent.
Grind ripe red tomatoes in a blender until a smoothie is smooth, then wipe the mashed potatoes through a sieve directly into the pan.
Fry onion with tomato puree for several minutes.
Zucchini peel and seed, cut into cubes. Add zucchini to the pan to the onions and tomatoes.
Wash the potatoes, peel them, cut them into small cubes, throw them into the pan after the zucchini.
Sweet red pepper is cleaned from seeds, cut finely, add to the rest of the ingredients.
Next, add the remaining meat broth or pour boiling water and throw 2-3 broth cubes into it.
Bring to a boil, cook for 30-40 minutes, until the vegetables are completely soft. In the end, salt to taste, add 1-2 teaspoons of granulated sugar and ground sweet paprika.
Grind the finished soup with a submersible blender until smooth.
Doctoral sausages are cut into small round slices, thrown into a pan, brought to a boil again.
Tomato soup with sausages served hot to the table. Before serving, sprinkle with fresh basil, it is better than any other herbs combined with the taste of tomatoes.
