Egyptian Koshari, or lean rice porridge
National cuisines are rich in simple folk recipes - “poor”, very tasty and quick to cook. In Egypt, a popular vegetarian dish of rice, lentils and pasta - koshari. This is a lean rice porridge with a thick tomato sauce. If you use red lentils, it will take about half an hour to cook. Lentils can be replaced with canned chickpeas or beans, it is important to add a little bean to the dish. The result impressed me, I advise you to cook with a reserve and the next day, it is very tasty! Koshari is a self-sufficient dish, some fresh herbs or a fresh cucumber, that’s all you need in addition.

Ingredients for Koshari
- 150 g of red lentils;
- 150 g round rice;
- 200 g pasta (colored spirals);
- 300 g canned tomatoes in their own juice;
- 1 onion;
- 2 cloves of garlic;
- 4 tablespoons of olive oil;
- a bunch of dill;
- salt, sugar, paprika.
The method of cooking lean rice porridge in Egyptian
To make lean rice porridge in Egyptian style, we wash round rice with cold water, put it in a pan with a thick bottom, pour 250 ml of cold water. As soon as the water boils, we reduce the heating, close the lid tightly. Cook for 12 minutes. Wrap a pan of cooked rice, leave for 10 minutes.
Pour 2 tablespoons of olive oil into the stew-pan, pour red lentils. Fry quickly over medium heat. This variety of lentils is cooked very quickly and does not require preliminary soaking.
Pour a glass of hot water, cook over medium heat for 12-15 minutes. Grains of lentils should remain intact, try not to turn them into porridge.
Boil the pasta until cooked. Any pasta is suitable, there are several types in the original recipe for nightmares, so take those that are.
Pour 2 tablespoons of olive oil into a wok or deep frying pan, spread the canned tomatoes with the sauce. Pour to taste salt, sugar and ground paprika.
Add finely chopped onions, chopped garlic and thyme sprigs. Cook the sauce over moderate heat for 10 minutes. In this recipe for lean rice porridge in Egyptian style you can use dried onions and garlic, it’s even faster and more flavorful.
Once the sauce is ready, collect the dish without removing the pan from the stove. First, put the boiled rice.
