Together, two salads are perfectly combined - cream egg and crispy cucumber perfectly complement each other. The appetizer looks beautiful, it tastes incomparable, and it takes several minutes to prepare. I do not advise you to cook in advance, cucumbers will give a lot of juice. Better to build it right before serving, with fresh rye bread - divine!

- 3 medium cucumbers;
- 3 chicken eggs;
- a small bunch of green onions;
- 1 tablespoon of white wine vinegar;
- 1 tablespoon of soy sauce;
- 2 tablespoons extra virgin olive oil;
- ½ teaspoon white pepper;
- ½ teaspoon ground turmeric;
- 50 g of fat sour cream;
- sea salt, chili pepper.

Carefully wash the vegetables, put them in a strong plastic bag, tie the bag with a knot. We take a rolling pin and "cuddle" the cucumbers through the bag. You don’t need to put on a great silushka, you’ll get porridge instead of salad, you need to gently knock to crack and crack. By the way, early greenhouse cucumbers, those from the store, and not from your garden, you can first cut in half and remove the seeds with a teaspoon - there will be less juice.
We chop the beaten cucumbers coarsely - pieces at your discretion in order to conveniently pry on the fork.
We put chopped cucumbers in a salad bowl, pour white wine or rice vinegar, hot soy sauce, pour ground white pepper, mix. You do not need to salt, there is enough salt in soy sauce.
Add extra virgin olive oil or sesame oil. We put the salad bowl in the refrigerator so that the beaten cucumbers absorb the juices, and in the meantime we prepare the egg salad.
Hard-boiled eggs, cool, clean. Rub the cooled eggs on a coarse grater into a salad bowl.
